I stumbled across this mini treat and I just had to see if it was that quick and simple to bake. Below are the steps I took to make these sweet treats, perfect for your next holiday party!

1 bag of Rolos
1 bag of glazed pecans

 Materials

Aluminum foil or parchment paper

Step 1: Preheat oven to Bake, 350 degrees.

Step 2: Place the pretzels on a pan covered with aluminum foil. Top each pretzel with one Rolo and when complete, place the pan in the oven for 3-5 minutes or until chocolate has completely melted.

Recipe of the Day: Victory Obama Cake!

This picture and recipe is taken from Simmer Down Food

 Victory Cake for Barack Obama

Ingredients

  • 1 box of chocolate cake mix; make two separate cakes to layer
  • 4 cups vanilla butter cream frosting
  • 2 cups unsweetened coconut flakes
  • red & blue food coloring
  • pastry bags for decorating
How to make the cake:

Bake two layers of the chocolate cake mix. After you let it cool, invert one cake layer onto a cake plate or platter and frost the top.  Sprinkle with coconut.  Lightly frost the top of the other layer and then invert that onto the first layer (this is so you have a nice flat surface on top.)  Frost the top and sides.  You don’t need to frost the top very heavily since it will get another layer when you decorate it.  Try to make sure it’s as smooth and even as possible to give yourself a good surface to work on.  Press the remaining coconut onto the sides of the cake.  Take about 2/3 cup frosting and color it blue; color another 2/3 cup red. For better results, place the frosting in a pastry bag so you can squeeze the frosting better when decorating.  Center a jar lid or other circular lid of the appropriate size onto the top middle part of your cake and press lightly; this will be your guide to outlining the blue arch of the campaign symbol as seen above. Using your red, blue, and white frosting, proceed to design the Barack Obama campaign logo.

GOD BLESS AMERICA!!

Recipe of the Day: Ice Cream Cakes!

I love the 4th of July and it is just so fun to decorate..the colors are easy and simple: red, white, and blue! However, one thing that I couldn't believe was so simple was a dessert that has become my favorite thing to make: ICE CREAM CAKES!

Ingredients:
  • Cake Mix (any flavor, for this example I used Funfetti)
  • Ice Cream cones
  • Frosting (buttercream is my fave!)
  • Cream cheese
  • Optional: sprinkles and other cake decorations!
How to Make Ice Cream Cakes:

Step 1: Grab your favorite store bought cake mix and bake it. Let cool

Step 2: In a large bowl, proceed to mush the cake mix adding in spoonfuls of cream cheese until the texture is moldable.

Step 3: Place the bowl in the freezer for 2 hours to let the mixture firm up.

Step 4: Form about two golf ball sizes of the mixture together and press it into the ice cream cone. Frost and decorate accordingly!

A simple treat that will NOT melt ;-)

    Directions

Heat oven to 350°F. Place paper baking cups into 18 muffin pan cups; set aside.

Combine flour, baking soda and cinnamon in medium bowl; set aside.

Combine sugar and 1/2 cup butter in large bowl. Beat at medium speed until creamy. Add egg; continue beating until well mixed. Reduce speed to low; add flour mixture and applesauce. Continue beating until well mixed.

To create scarecrow face, spread 1 heaping tablespoon frosting over 1 cupcake; place pretzel square onto cupcake to make top of hat. Place small amount of frosting on back-side of graham cracker stick; place below pretzel to make hat band. Insert chow mein noodles into frosting around hat to resemble straw. Make face using assorted candies, chips or decorator gels. Repeat with remaining cupcakes and decorations.

    Store in loosely covered container.

*Substitute colored marshmallows such as toasted coconut, strawberry or chocolate. Cut off 1 end of marshmallow and press sticky end to graham cracker stick and onto frosting to adhere.

    Recipe Tip
    - If frosting becomes too firm while decorating cupcakes, stir in additional half & half until desired consistency.

    - If you are short on time, use your favorite cake mix for the cupcakes; top with frosting recipe above and decorate as directed.
